Tylko&#8230; no w\u0142a\u015bnie &#8211; ile to jest to troch\u0119?<\/p>\n<p><!--more--><\/p>\n<p>Dos\u0142adzaj\u0105c sok zale\u017cy mi na znajomo\u015bci ostatecznej zawarto\u015bci cukru w litrze, bo to umo\u017cliwia mi oszacowanie zawarto\u015bci alkoholu.<\/p>\n<p>O ile w \u015bwie\u017cym soku, znaj\u0105c jego SG, zawarto\u015b\u0107 cukru mo\u017cna odczyta\u0107 z tabel, o tyle w przypadku soku dos\u0142adzanego ta metoda przestaje si\u0119 sprawdza\u0107 &#8211; w dos\u0142adzanym soku cukr\u00f3w jest wi\u0119cej ni\u017c wynika\u0142oby ze zmierzonego SG, cho\u0107 nie wiadomo ile wi\u0119cej.<\/p>\n<p>Wszystko da si\u0119 oczywi\u015bcie wyliczy\u0107, z tym \u017ce wa\u017cne jest \u017ceby zmierzy\u0107 SG soku jeszcze przed dos\u0142odzeniem. Pomiar wykonany dopiero po dos\u0142odzeniu jest niewystarczaj\u0105cy.<\/p>\n<h1>S\u0142odzenie cukrem<\/h1>\n<p>Za\u0142\u00f3\u017cmy, \u017ce mam litr soku o SG 1,040 (10<sup>o<\/sup>Bx, 84,9g cukru) i dosypuj\u0119 do niego 40g cukru. Z pozoru problem mo\u017ce wyda\u0107 si\u0119 banalny &#8211; przecie\u017c w efekcie b\u0119dzie 84,9g + 40g = 124,9g cukru, wi\u0119c o czym tu du\u017co m\u00f3wi\u0107? Ot\u00f3\u017c problem polega na tym, \u017ce dodanie cukru spowoduje wzrost obj\u0119to\u015bci, wi\u0119c zamiast oczekiwanego 124,9g\/L dostan\u0119 124,9g\/(L+<em>V<sub>x<\/sub><\/em>). Czyli tak na prawd\u0119 nie wiem ile b\u0119dzie tego cukru w litrze, bo nie znam <em>V<sub>x<\/sub><\/em>. Wymy\u015blenie rozwi\u0105zania zaj\u0119\u0142o mi ca\u0142y wiecz\u00f3r&#8230; \ud83d\ude09<\/p>\n<p>Podejd\u0119 do sprawy tak: za\u0142\u00f3\u017cmy, \u017ce znam procent <em>Brix<sub>soku po dos\u0142odzeniu<\/sub><\/em> &#8211; to jest prosta relacja mi\u0119dzy masami, b\u0119dzie si\u0119 da\u0142o obliczy\u0107. Znaj\u0105c ten procent Brix mog\u0119 odczyta\u0107 z tabel odpowiadaj\u0105c\u0105 mu warto\u015b\u0107 <em>SG<sub>soku po dos\u0142odzeniu<\/sub><\/em>. Tabele w tym przypadku wci\u0105\u017c dzia\u0142aj\u0105 &#8211; obie warto\u015bci zale\u017c\u0105 od ca\u0142kowitej zawarto\u015bci rozpuszczonych substancji, proporcja cukru nie ma znaczenia. Dobrze wiedzie\u0107 jak to si\u0119 robi, ale\u00a0chyba przyda\u0142by si\u0119 kalkulator, \u017ceby nie trzeba by\u0142o tego za ka\u017cdym razem r\u0119cznie liczy\u0107. Ale to za moment &#8211; zobacz\u0119 jeszcze jak by si\u0119 sprawy mia\u0142y w przypadku s\u0142odzenia miodem (lub syropem).<\/p>\n<h1>S\u0142odzenie miodem<\/h1>\n<p>Osobi\u015bcie, je\u015bli ju\u017c musz\u0119 s\u0142odzi\u0107 sok, zamiast cukru u\u017cywam miodu. Mi\u00f3d dodaje aromatu, a przy okazji opr\u00f3cz cukru zawiera r\u00f3wnie\u017c inne substancje &#8211; dodaj\u0105c mi\u00f3d nie dodaj\u0119 po\u017cywek, a mimo to nigdy nie mam problemu ze startem i przebiegiem fermentacji.<\/p>\n<p>Obliczenia w przypadku u\u017cycia miodu s\u0105 proste, ale wymagaj\u0105 informacji o u\u017cytym miodzie: konieczna jest znajomo\u015b\u0107<em> SG<sub>miodu<\/sub><\/em> oraz zawarto\u015bci cukru w 100g miodu.<\/p>\n<p><em>SG<sub>miodu<\/sub><\/em> mo\u017cna zmierzy\u0107 u\u017cywaj\u0105c do tego areometru, z tym \u017ce w przypadku miodu m\u00f3wimy o SG rz\u0119du 1,400 wi\u0119c bezpo\u015bredni pomiar w miodzie odpada. Na potrzeby pomiaru mi\u00f3d trzeba rozcie\u0144czy\u0107 wod\u0105 i obliczy\u0107 <em>SG<sub>miodu<\/sub><\/em> na podstawie <em>SG<sub>rozcie\u0144czonego\u00a0miodu<\/sub><\/em> ze wzoru:<\/p>\n<p><em>SG<sub>miodu<\/sub> = [SG<sub>rozcie\u0144czonego\u00a0miodu<\/sub> (V<sub>miodu<\/sub> + V<sub>wody<\/sub>) &#8211; V<sub>wody<\/sub>] \/ V<sub>miodu<\/sub><\/em><\/p>\n<p>Z tym \u017ce tutaj pojawia si\u0119 problem z dok\u0142adno\u015bci\u0105 takiego pomiaru, poniewa\u017c przy proporcji 1 cz\u0119\u015b\u0107 miodu na 9 cz\u0119\u015bci wody dostajemy taki wz\u00f3r:<\/p>\n<p><em>SG<sub>miodu<\/sub> = 10 * SG<sub>rozcie\u0144czonego\u00a0miodu<\/sub> &#8211; 9<\/em><\/p>\n<p>a co za tym idzie je\u015bli machniemy si\u0119 w pomiarze rozcie\u0144czonego miodu o SG 0,001 to b\u0142\u0105d wyniku ko\u0144cowego b\u0119dzie o rz\u0105d wielko\u015bci wi\u0119kszy i wyniesie SG 0,010, a to ju\u017c ca\u0142kiem sporo.<\/p>\n<p>Alternatywnie mo\u017cna oszacowa\u0107 <em>SG<sub>miodu<\/sub><\/em> pos\u0142uguj\u0105c si\u0119 wzorem:<\/p>\n<p><em>SG<sub>miodu<\/sub> = m<sub>miodu<\/sub> \/ V<sub>miodu<\/sub> \/ \u03c1<sub>w<\/sub><\/em><\/p>\n<p>gdzie <em>m<sub>miodu<\/sub><\/em> i <em>V<sub>miodu<\/sub><\/em> musimy zmierzy\u0107. \u017beby pozna\u0107 mas\u0119 najpro\u015bciej jest zwa\u017cy\u0107 s\u0142oik z miodem, nast\u0119pnie przela\u0107 mi\u00f3d do innego pojemnika i zwa\u017cy\u0107 pusty s\u0142oik. \u017beby pozna\u0107 obj\u0119to\u015b\u0107 trzeba dope\u0142ni\u0107 s\u0142oik wod\u0105, odmierzaj\u0105c jej obj\u0119to\u015b\u0107, do poziomu do jakiego wype\u0142nia\u0142 go mi\u00f3d. Przeprowadzaj\u0105c pomiar na du\u017cej obj\u0119to\u015bci miodu, np. na pe\u0142nym s\u0142oiku, otrzymany wynik b\u0119dzie bardzo dok\u0142adny.<\/p>\n<p>Czas na pr\u00f3b\u0119. Wykona\u0142em pomiar obiema metodami: pierwsz\u0105 uzyska\u0142em ci\u0119\u017car w\u0142a\u015bciwy miodu SG=1,420 za\u015b drug\u0105 SG=1,426 &#8211; uwa\u017cam \u017ce jest nie\u017ale :-). Poni\u017cszy kalkulator pokazuje zawarto\u015bci cukr\u00f3w oraz nie-cukr\u00f3w w naturalnym soku jab\u0142kowym, umo\u017cliwia s\u0142odzenie soku, jak r\u00f3wnie\u017c pokazuje wynikowe zawarto\u015bci substancji, przewidywan\u0105 zawarto\u015b\u0107 alkoholu i prognozowan\u0105 ko\u0144cow\u0105 warto\u015b\u0107 ci\u0119\u017caru w\u0142a\u015bciwego (SG) i Brix.
